7-inch Japanese-Style Fillet Knife — 9-Layer High-Carbon Boning Blade
Product description
What’s included: one 7-inch fillet/boning knife with a slender, thin blade intended for detailed fish and meat preparation.
Blade construction: the blade is forged from a 9-layer composite steel with a hardened core rated at approximately HRC 62. That layered construction combines a tough, wear-resistant exterior with a high-carbon center that keeps a keen edge for extended periods. The surface features a subtle frosted texture that helps reduce sticking while giving a professional look.
Blade profile and performance: at 7 inches the blade is narrow and flexible, designed to follow the contours of fish and other ingredients for precise skinning, boning, filleting, butterflying and trimming. Its flexibility allows close contact with bones and curving surfaces, letting you produce restaurant-style fillets with minimal waste.
Handle details: the handle pairs durable G10 with rosewood accents for a balanced, ergonomic grip. The shape is crafted to reduce hand and wrist fatigue during longer sessions, while textured materials provide slip resistance when working with wet surfaces.
Use and care: this knife is intended for detail cutting tasks—fish, poultry, and trimming meats—and excels at fine slicing and removal of skin. Lightweight construction aids maneuverability and speed. To preserve edge and finish, hand-wash and dry after use, hone or strop as needed, and avoid dishwasher cleaning or careless storage to prevent damage.
Pros
- High-hardness 9-layer composite steel core for long edge life

VerdictThis 7-inch Japanese-style fillet knife delivers exceptional edge performance and flexibility for fish and delicate meat work thanks to its hardened 9-layer composite steel core. A solid choice for home c

Reliable everyday kitchen blade
Sharp and balanced, comfortable in hand. I mainly use it for trimming brisket and other meats. Handle feels solid so far — great value for home use.

Feels and performs like a pricier knife
Extremely sharp, attractive finish and so far resistant to rust. The size fits my needs well — great value for what it does.

Great after months of use
After several months it’s still very sharp and the handle holds up. Hard to chip. The balance is a bit blade-heavy for me, but overall a solid, budget-friendly choice.

Excellent starter set-quality
Very sharp and attractive. Designed in a Japanese style but manufactured in China if that matters to you. Mom loved the look — time will tell durability, but it seems worth buying.

Razor-sharp and keeps its edge
Cuts like a laser. Easy to maintain with a 3000 grit stone and a strop. Well weighted for big chopping tasks and shows no rust when cared for. Don’t put it in a dishwasher.

Better than expected for the cost
I collect high-end Japanese blades and while this doesn’t match artisan pieces, it’s surprisingly capable. The spine is thicker than premium knives, but the grind is well done and it cuts like a much more expensive tool. It’s on the heavier side and not super nimble, but for what it costs I’m impressed.

A very good, very sharp knife. Be careful to avoid cutting yourself.

Keeps arriving slightly bent
This is my second purchase. It cuts perfectly and is sharp, but the spine keeps showing a slight downward curve. Good weight, but may be inconsistent.
